The best niche is the one I'm cooking up and not telling anyone til its done. Diet niche would come under Health maybe?

A more honest and helpful answer from me would be "The best niche directory is one in which the directory owner has a bit of knowledge on the topic being presented so they know what categories are needed, how to organize them, and to be able to review the sites submitted. If the directory owner is truly interested in the niche it makes it easier to promote as they are most likely a member of one or more forums in that niche where their target submittors/customers and site visitors can be found."
Creating a niche directory solely based upon which ads pay more will make it much harder to be competitive with everyone else also chasing the same thing.
